This recipe is so tasty! Even those who are not a big fan of green beans love this recipe, so that says a lot.

Serve these with roasted chicken, bring them to your summer bbq, or just eat them as a healthy snack (did you ever think you’d be snacking on green beans for fun?).

Want another option? Make them ahead of time with meal prep so you’ll have tasty veggies on hand at all times. They may soften up a bit in the fridge over time but they’ll still be tasty. Don’t forget to squeeze the lemon over top! It’s my favorite…well no the parmesan is my favorite…or the garlic.

Make it Whole30

To make this green bean dish Whole30 compliant, just omit the parmesan cheese.

I personally love parmesan and the punch of flavor it brings, but if you’re doing an elimination diet this is a great way to make these green beans work for you.

Although green beans are technically legumes, you don’t consume the seed so they’re allowed (along with sugar and snow peas).

Important Recipe Tips

The most important tip I have for the recipe is patting dry the green beans. By doing this the beans become slightly crispy when baking instead of mushy.

I also add some garlic powder and onion powder to the olive oil mixture, this is so every little part of the dish gets a lot of flavor and not just the green beans that are close to the minced garlic.

Make sure you finish the dish with a final squeeze of lemon juice. This makes this healthy side dish fresh and perfect for warmer seasons.

Cook Time 25 minutes

Ingredients

  • ½ Pound green beans
  • 2 Tbsp olive oil
  • 2 Garlic cloves minced
  • ½ Tsp garlic powder
  • ¼ Tsp onion powder
  • Salt and pepper to taste
  • 3 Tbsp parmesan cheese optional
  • A squeeze of lemon juice

Instructions

  • Preheat oven to 400 degrees.
  • Wash and pat dry green beans and place in a baking pan.
  • In a small bowl combine olive oil, minced garlic, garlic powder, onion powder, salt and pepper. Drizzle over the green beans and toss to combine.
  • Sprinkle with parmesan cheese and take to the oven. Bake for 15 minutes and toss again. Bake for 10 more minutes.
  • Remove from oven and drizzle with lemon juice.
