Homemade Almond Milk
I have been making almond milk from scratch for over a year now, off and on. I still buy a carton from time to time but when I have a minute, I go for fresh.
Fresh is always best.

PS: I’m aware that it seems odd to call it milk. You don’t “milk” almonds like you do a cow (sorry I’m sitting here laughing while picturing it). Maybe almond beverage?

Is carrageenan bad for you?
If you read the label of the store bought almond milk that’s sitting in your fridge, you’ll find that one of the ingredients listed is carrageenan.
Carrageenan is a form of seaweed (Irish Moss found on the British Isles). There’s a lot of controversy over it.
It’s commonly used as a thickener in dairy-free milk, puddings, yogurts, etc and although it’s a natural source there has been research that states it’s inflammatory and toxic to our bodies [*].
I personally feel that milk shouldn’t be thickened up anyway, so I’m good with leaving this ingredient out.
How long can almond milk stay in the fridge?
As long as you store the dairy free milk in an airtight jar (like these cute old fashioned milk jars or a mason jar) it should keep for about five days. This is why it’s a good idea to make almond milk in small batches, that way you don’t waste anything.
What do you do with the leftover almond pulp?
Once the milk is ready, don’t discard the almond pulp! That’s almond meal and you can make so many tasty things with it.
You can grind it even finer and use it as almond flour in baked goods like gluten free shortbread cookies.
Or you can leave it as is and make something like these almond pulp crackers.

How to make almond milk
Okay. Let’s just get to it, shall we?
Do I have to soak almonds overnight?
It’s recommended you soak the almonds overnight. This makes it easier to blend and gives off more liquid. They should soak for at least 12 hours (so overnight is best).
Don’t have time to wait 12 hours?
You can soak the almonds in hot water for an hour. It won’t provide the same results as soaking overnight, but it will still work.

- 4 cups Water
- 1 cup Almonds
Instructions
Soak overnight
- Soak the almonds in water (just enough to cover them) in a bowl overnight, or 12 hours. Don't have 12 hours? Read the notes at the bottom of the recipe card.
Make the milk
- Add the cup of almonds and four cups of water to a blender. Blend for 1-2 minutes.
- Pour the contents of the blender into the nut milk bag (over a bowl of course) and strain and squeeze every last drop out. Transfer to an airtight bottle.
