I love baby potatoes roasted. There is something perfect about a crispy outside and a soft and buttery inside of baby or new potatoes that is pure comfort.
I also like a flavourful potato, I’m actually not a huge potato fan unless they’re popping with seasoning.
So now that summer is almost here, it was time to create a bright potato using some of the best summer ingredients: garlic, dill, and lemon.
I did go light on the lemon, but feel free to add more (or let it sit more to marinate).

You’ll notice that the majority of recipes for baby potatoes have simple ingredients. It doesn’t take much to make a delicious side dish.
How to Marinate Potatoes
I decided to go the route of marinated potatoes for this recipe.
Simply combine the baby potatoes with the ingredients, cover and let sit for at least 30 minutes or for up to a couple hours.
The longer it sits, the more impact the flavor has!
Serving Suggestions
This is a pretty forgiving recipe that can be served with most side dishes. I served it with chicken but it would also go great with fish, pork, and even steak!

Storing Instructions
Store the garlic dill potatoes in a resealable container in the fridge for 3-4 days.
As for freezing, I wouldn’t recommend it. Freezing potatoes usually gives it an off texture.

Whether you like baby potatoes oven-roasted or grilled on the barbecue, those who follow Whole30 can rejoice as a few years ago potatoes became Whole30 compliant. Potatoes are a whole food and so are the rest of the ingredients, so if you’re following a Whole30 elimination diet rest assured. I got you! This recipe is also classified as paleo as well.
Can I make roasted potatoes in the air fryer?
This recipe would be incredible in the air fryer, but I haven’t tried it myself. I will and when I do I will update the recipe, but for now follow the recipe and cook to your air fryer’s recommendations for potatoes.

Roasted Garlic Dill Potatoes
Equipment
Ingredients
- 2 lbs baby potatoes cut in half
- 3 tablespoons olive oil
- 4 cloves garlic minced
- 1/4 cup dill roughly chopped (stems removed)
- 2 tablespoons lemon juice
- 1 teaspoon zest
- 1 teaspoon salt
- 1/4 teaspoon pepper
Instructions
- Preheat oven to 425F and line a sheet pan with parchment paper.
- Combine all the ingredients in a mixing bowl, cover, and let marinate for at least 30 minutes (the longer the better).
- Pour the potatoes on the parchment paper lined sheet pan and transfer to the oven.
- Roast for 30 minutes, stir it, and add it back to the oven for another 15 minutes (or until skin is crispy). Serve.
