Chicken Stuffed Pepper Soup
You are going to love this healthy recipe for stuffed pepper soup. I’m so happy with the way it came out. I couldn’t resist but serving it with a whole wheat bun, topped with some butter.

The weather is still a bit nippy some days here in the Okanagan, so it works (and let’s face it, I’m the kind of person who would eat soup in summer weather too).
Soup is awesome because it’s so easy to sneak in so many vegetables for picky eaters of all ages.
Ingredients needed
To make this easy stuffed pepper soup, you just need some simple ingredients:
- onion
- celery
- carrots
- garlic (I used lots, no regrets)
- ground chicken or turkey
- chicken broth
- red pepper
- green pepper
- marinara sauce (look for one with no added sugar, I like the Kirkland Organics brand)
- Italian seasoning (I used the Clubhouse brand)
- brown rice (I used long grain)
- tomato paste
- salt and pepper
- avocado oil
Variations
There are multiple ways to make this easy chicken stuffed pepper soup work for your family. Here are some ideas:
- Swap chicken for ground turkey for turkey stuffed pepper soup.
- Use shredded chicken instead of ground chicken.
- That being said, you can use turkey dinner leftovers for another turkey pepper soup recipe.
- Replace brown rice for quinoa.
- Take out the rice altogether and add in cauliflower rice for more veggies and a low-carb stuffed pepper soup recipe.
Instant Pot Stuffed Pepper Soup
I made this recipe on the stovetop, but here are the instructions on how to make Chicken Pepper Soup in the Instant Pot or Ninja Foodi.
Not sure what pressure cooker? Here are the differences between the Instant Pot and Ninja Foodi.
- Add avocado oil to the pot and turn on the saute mode and heat up. Next up are the onion, carrots, and celery, and stir for 4-5 minutes (or until the onion is translucent).
- For the next step, we’re going to add the bell peppers and saute for another 4-5 minutes, adding the garlic for the last minute.
- Next, add the ground chicken, marinara, chicken broth, Italian seasoning, and rice.
- Add the lid, seal it, and turn pressure to high. Set the timer for 15 minutes. Let it come down naturally for 10 minutes and then release the pressure manually.

Chicken Stuffed Pepper Soup Recipe
Equipment
Ingredients
- 2 tablespoons avocado oil
- 1 large onion diced
- 2 celery stalks diced
- 2 carrots peeled and diced
- 1 red pepper diced
- 1 green pepper diced
- 4 cloves garlic minced
- 1 lb ground chicken
- 2 cups marinara no sugar added variety (I like Kirkland Organics)
- 4 cups chicken broth
- 1 tablespoon italian seasoning
- 6 oz tomato paste
- 1/2 cup long grain brown rice rinsed
- 1/2 teaspon salt
- 1/2 teaspoon pepper
Instructions
Stovetop Instructions
- In a large pot heat the avocado oil over medium heat. Add the onion, carrots, and celery and stir for 5-6 minutes (or until onion is translucent).
- Add the bell peppers and saute for another 4-5 minutes, adding the garlic for the last minute.
- Next add the ground chicken and cook until no longer pink, 4-5 minutes.
- Add the marinara, chicken broth, Italian seasoning and bring to a boil over medium-high heat.
- Add the rice, stir, and cover. Turn the heat down to low and simmer for 45 minutes (or until the rice is no longer crunchy). Enjoy!
Instant Pot/Ninja Foodi/Pressure Cooker Instructions
- Add avocado oil to the pot and turn on the saute mode and heat up. Add the onion, carrots, and celery and stir for 4-5 minutes (or until the onion is translucent).
- Add the bell peppers and saute for another 4-5 minutes, adding the garlic for the last minute.
