I’m on a bit of a smoothie kick right now. It’s a great way to get the kids to have their veggies and this pineapple avocado smoothie recipe is my toddler’s favorite.

Pineapple Avocado Smoothie

Have you ever had an avocado shake? I know, it seems weird but trust me – it’s delicious.

Adding avocado to your smoothie (or post workout shake) is a great way to up the fiber and healthy fats that your body needs.

On the plus side, the avocado makes it extra creamy. It’s perfect for shakes/smoothies.

Ingredients You Need

For this tropical avocado shake you need a few ingredients:

  • 1 cup frozen pineapple. You can use fresh if that’s what you have.
  • 1 cup unsweetened coconut milk. You need the boxed variety (the beverage) not the canned ones.
  • 3/4 cup plain greek yogurt with 0% fat. (You can also add protein powder, I have notes below).
  • 1/2 cup frozen cauliflower rice, or more if you want more veggies!
  • 1/4 cup frozen avocado, look in the freezer section. The avocado is cut into cubes and they don’t go brown!
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon honey

Questions about the recipe

How do I not waste the avocado when I use it in shakes? I don’t want it to go brown.

For shakes, I buy frozen avocado. They’re chopped into cubes and are easy to measure out.
For salads and recipes, I use this avocado saver to help prevent it from going brown. Is it perfect? No but it works really well (well enough where I made a Reel about it, posted above).

Do I have to use cauliflower rice or can I add cauliflower?

You can totally add cauliflower florets. I used frozen, but try it fresh and let me know how it goes in your pineapple avocado shake.

Can I use protein powder?

Yes, the taste will change a bit but I have made this with both vanilla protein powder and a pineapple protein powder (not the protein I used but this one has good reviews) and it was delicious.

How to Make Pineapple Avocado Smoothie

The awesome thing about smoothies is all you need is a blender (or a food processor). I use a Vitamix but a blender like a Ninja is also awesome and a lower price point.

Make sure you try more smoothies with avocado! It’s especially good with cocoa based ones, like a chocolate banana smoothie.

Ingredients

  • 1 cup frozen pineapple
  • 1 cup unsweetened coconut milk in the box, not the can
  • 3/4 cup plain greek yogurt 0%
  • 1/2 cup frozen cauliflower rice
  • 1/4 cup frozen avocado
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon honey

  • 2 teaspoons toasted coconut for garnish
  • 1-2 cup ice

Instructions

  • Add all the ingredients into a blender and blend.
