Quinoa Salad Ingredients

chickpeas, sundried tomatoes, bell peppers, spinach, and onion in a bowl ready to be tossed. Pin
  • Quinoa (you’ll want to cook it first, 2:1 ratio (1/2 cup quinoa to 1 cup water).
  • Red bell pepper
  • Yellow bell pepper
  • Baby spinach
  • Canned chickpeas (make sure to drain and rinse them first)
  • Marinated sundried tomatoes (rinse the oil off them)
  • Red onion

I love chickpeas in a salad. They’re a fantastic source of plant-based protein and full of fiber. Here are a few more of my favorite plant-based proteins.

Add In Options:

I always encourage you to make the recipes work for you. Don’t like onion, leave it out. Love olives? Add them in! Play around with the ingredients and add ins and create your own recipe.

  • Chicken**
  • Black olives
  • Cucumbers
  • Fresh tomatoes
  • Feta cheese**

** These are options if you’re not vegan or vegetarian.

This Greek inspired Mediterranean Quinoa Salad recipe is perfect for picnics, bbqs, or as a healthy meal prep recipe for lunches and dinners.

Ingredients

Salad Ingredients

  • 1 cup cooked quinoa
  • 1 red bell pepper diced
  • 1 yellow bell pepper diced
  • 1 cup spinach
  • 1 cup canned chickpeas drained and rinsed
  • 1/2 cup sundried tomatoes rinsed if marinated in oil
  • 1/4 red onion diced

Vinaigrette

Instructions

  • Add the quinoa, bell peppers, chickpeas, kale, and sundried tomatoes, red onion to a large salad bowl.
  • In a small bowl whisk together the vinaigrette ingredients (or toss all the vinaigrette ingredients into a blender). Pour over the quinoa. Toss together.

Notes

The longer it sits, the better it tastes. Make it ahead and it will be that much better when you serve it!
