What is Nutritional Yeast?
Nutritional yeast doesn’t necessarily sound delicious but this vegan-friendly ingredient has the ability to add a yummy cheesy taste to everything from pasta to popcorn.
Those who are familiar with it have affectionately referred to it as “nooch.”
This ingredient has been a prevalent addition to vegetarian restaurants and vegan cookbooks for quite some time now and it’s for good reason. Fortified nutritional yeast is actually a source of B12, which is rare for a non-animal source.
Nutritional yeast is not just for vegans and vegetarians though, there are many carnivores out there that love it for it’s savory and cheesy flavour.
“Nooch” is an inactivated version of the yeast you commonly use in bread recipes as a leavening agent.
It actually bears a resemblance to powdered parmesan, which makes sense as it is quite similar in flavour.
Nutritional yeast is non-dairy and comes from the same species as Brewer’s yeast. This species is called Saccharomyces cerevisiae but it shouldn’t be confused with the live version. You can’t make beer from nutritional yeast.
Recipes Using Nutritional Yeast
There are several recipes out there that use nutritional yeast and not all of them are vegan or vegetarian.
