Pesto Potatoes Ingredients
I get it, you don’t always have time to throw together an incredible side dish from scratch (neither do it). So take a shortcut and make life easier for yourself with these two ingredient pesto potatoes.
All you need for this recipe is the following:
- Baby potatoes
- A jar of your favorite pesto.
Optional: sprinkle a little parmesan cheese over the top while the potatoes are hot out of the oven. I did this at the last minute and I enjoyed the results but it’s not necessary.
You make a homemade pesto if you would rather, but jarred pesto is just as tasty.
Since the pesto is loaded with olive oil, garlic, basil, salt, and all the other herbs needed to make hummus you don’t have to worry about a thing.
What to serve Roasted Pesto Potatoes with
I cooked up these potatoes with my meal prep on a Sunday to enjoy as a side dish throughout the week.
I also tossed a few on my salads for a starchy carb, and it was delicious (I highly recommend doing that).
Here are a few main course ideas to serve this easy side dish with:
- Ninja Foodi Pesto Whole Roast Chicken Recipe (or any roast chicken will work).
- Romesco Stuffed Chicken Breasts (this recipe is full of flavor and would be delicious with roasted potatoes, but again any chicken breast recipe will work).
- Steak dinner

Ingredients
- 1.5 lbs baby potatoes 680 grams
- 1/4 cup pesto 72 grams
Instructions
- Preheat oven to 425F
- Slice the baby potatoes in half and add to a bowl. Pour over 1/4 cup of pesto and stir together.
- Add to a baking sheet or casserole dish and roast in the oven for 25-30 minutes or until they're fork tender and browning.
