Healthy Chicken Burrito Bowls
I don’t know about you but I’m partial to southwest and Mexican flavors. I love salsa, cumin, and chili powders and I cook a lot with those seasonings and spices.
Chicken burrito bowls are common in my house because they’re so easy to throw together on busy days, but I wanted to see if I could throw something together in the pressure cooker.
It turned out amazing.
I’m sold on using my Ninja Foodi for burrito bowls from now on.
Creating the chicken and rice in the Instant Pot (or whatever pressure cooker you have) combines two steps into one and the flavor of the seasonings and salsa infuses throughout the base.
Ingredients Needed
The best part about chicken burrito bowls is that you can customize the recipe to your tastes. Below I have included the ingredients I have used plus some variations to give you options.
- brown rice
- chicken (breasts or thighs work fine)
- chicken broth (veggie broth if you’re vegetarian or vegan)
- black beans
- corn
- salsa
- chili powder
- cumin
- onion powder
- salt
- garlic
- assorted bell peppers
- avocado
- cilantro
- lime

- dark leafy greens (spinach would be best)
- quinoa
- steak
- pork
- tofu
- nuts or seeds
- beef (ground/minced)

- chicken (ground, thighs, breasts, etc)

How to Pull Chicken
Once the meal is cooked in the pressure cooker, I will take the chicken breasts and pull them apart using two forks.
I do this inside the pressure cooker but you can also remove them and do it on a plate.
Does This Recipe Use a Sauce?
I originally planned on making an avocado creama or chipotle mayo to top the burrito bowl with but honestly, I forgot.
There’s always next time.
There was so much flavor in the rice and chicken mixture that it really didn’t need a sauce.
Instant Pot vs Ninja Foodi
I’ve owned both but I prefer the Ninja Foodi.
Here’s why
The Ninja Foodi does more, it has a built-in air fryer (Instant Pot now has an air fryer lid you can buy as an accessory).
The Foodi also has an awesome slow cooker option that has allowed me to declutter and get rid of my slow cooker. The Instant Pot slow cooker function didn’t work well for me.
The Ninja Foodi is larger and takes up more counter space but I think it’s worth it.

Regardless of if you have an Instant Pot, Ninja Foodi, Breville, etc. This recipe will work for you.
Are Burrito Bowls Healthy?
To make a healthy burrito bowl recipe, you have to think about your ingredients and your portion size.
Filling your bowl with nourishing vegetables like leafy greens, bell peppers, tomatoes, and other filling vegetables is always key.
If you’re have burrito bowls that are mostly rice and corn, you’ll want to add a protein in there whether it’s chicken, beef, tofu, or black beans.
To further balance it out, add a healthy fat. This could be a homemade sauce, avocado, or even a tablespoon or two of nuts or seeds.
Remember portion size is important. You can make a healthy meal unhealthy by eating too much of it. Too much of a good thing…can be a bad thing.
How Long Does it Keep in the Fridge?
The bowls will last 4-5 days in the fridge. This recipe will be 4 servings, so if you’re making them for meal prep then you’ll have four lunches or dinners ready to go for four different days…how great is that?!
You can store them in any reusable container but these glass ones are my favorite.
How to Make Chicken Burrito Bowls in the Pressure Cooker
The best part about these meal prep chicken burrito bowls? It’s so easy to make! Simply toss the ingredients in the pressure cooker and when it’s done top with some raw bell peppers, avocado, and you’re done.

Instant Pot Chicken Burrito Bowls
Equipment
Ingredients
- 1 cup brown rice
- 2 cups chicken broth
- 2 large chicken breasts
- 1 15oz black beans drained and rinsed
- 1/2 cup corn fresh or frozen
- 1 cup salsa
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 1/2 teaspoon onion powder
- 1 teaspoon salt
- 3 cloves garlic minced
- 1 red bell pepper diced
- 1 orange bell pepper diced
- 1 avocado diced
- 1/4 cup fresh cilantro
- 1 lime quartered
Instructions
- Add all of the ingredients except for the bell peppers, avocado, cilantro, and lime. Do not mix the ingredients together. Leave it in layers.
- Seal the pressure cooker and cook on high pressure for 10 minutes. Let the pressure come down naturally for 10 minutes and then vent.
- Take two forks and shred the chicken.
- Scoop the burrito mixture into a bowl and top with fresh bell peppers, avocado, fresh cilantro and squeeze lime over top.
