Chicken Jambalaya with Cauliflower Rice

You are going to love this healthy chicken and sausage jambalaya.

It's a lower carb option then traditional rice, but you can add it in if you want.

It's a high protein dish and it's a great dish to divide up for meal prep!

Ingredients

–Chicken breast  –Hot italian sausage  –Avocado oil –Onion diced –Green pepper –Celery stalks  –Garlic  –Cajun seasoning –Oregano –Frozen cooked shrimp –Crushed tomatoes –Chicken broth –Frozen cauliflower rice –Bay leaf –Salt and pepper to taste

INSTRUCTIONS

In a large stock pot or dutch oven, heat oil over medium heat.

Once hot add the chicken and sausage.

There should be some oil left in the pan, if not add more. Add the onions, peppers, celery and saute until onion is translucent and peppers are soft.
