Thai Chicken Veggie Noodle Salad with Creamy Peanut Dressing

If you love spiralized vegetables as much as I do then you’re going to love this Thai Chicken Veggie Noodle Salad.

It’s made with a creamy peanut dressing that takes seconds to whip up and is a great make ahead meal for meal prep.

Ingredients

Zucchini, Carrot, Red bell pepper, Cooked chicken breasts, Purple cabbage, Broccoli, Peanut butter, Water, Lime juice, Apple cider vinegar, Coconut aminos, Maple syrup, Cloves garlic minced, Red pepper flakes, Cashews, Black and white sesame seeds

INSTRUCTIONS

Spiralize the zucchini and carrots using a spiralizer or attachment on a food processor. 

Add all the peanut sauce ingredients in a blender. Blend until smooth

Pour the peanut sauce over the salad ingredients and toss. Top with cashews.
