Gluten Free Shortbread Cookies

If you have a new or long-time sensitivity to gluten, these cookies are perfect for you. These gluten free shortbread cookies made with almond flour will make the holidays bright.

Ingredients

Unsalted Butter  Powdered Sugar Salt  Vanilla Extract Almond Flour 

Preheat your oven to 350F

Using a stand mixer or a bowl with a handheld mixer, beat together butter, sugar, salt, and vanilla for 2-3 minutes until the mixture is soft and well combined.

Gradually incorporate the almond flour and continue mixing until everything is thoroughly blended.

Prepare a large baking sheet by covering it with parchment paper.

Using a small spoon, scoop the batter and shape it into a ball (the size will determine the quantity). I opted for 1/2 tablespoon. Gently press the ball with a fork. If you'd like to include festive sprinkles, add a few at this point.

Place in the oven for 10 minutes, then allow it to cool.
