-avocado oil -carrots -onion -celery -garlic -red pepper -green pepper -ground chicken

-marinara -chicken broth -Italian seasoning -tomato paste -brown rice -salt -pepper

In a large pot heat the avocado oil over medium heat. Add the onion, carrots, and celery and stir for 5-6 minutes (or until onion is translucent).

Add the bell peppers and saute for another 4-5 minutes, adding the garlic for the last minute.

Next add the ground chicken and cook until no longer pink, 4-5 minutes.

Add the marinara, chicken broth, Italian seasoning and bring to a boil over medium-high heat. Add the rice, stir, and cover. Turn the heat down to low and simmer for 45 minutes.
