Ingredients

  • 1 cup frozen pineapple
  • 1 cup unsweetened coconut milk in the box, not the can
  • 3/4 cup plain greek yogurt 0%
  • 1/2 cup frozen cauliflower rice
  • 1/4 cup frozen avocado
  • 1/2 teaspoon vanilla extract
  • 1 teaspoon honey

optional

  • 2 teaspoons toasted coconut for garnish
  • 1-2 cup ice

Instructions

  • Add all the ingredients into a blender and blend.

Notes

Protein Powder instead of Greek Yogurt: 
Yes, the taste will change a bit but I have made this with both vanilla protein powder and a pineapple protein powder (not the protein I used but this one has good reviews) and it was delicious.
