Ingredients

  • 2 tablespoons avocado oil
  • 1 large onion diced
  • 2 celery stalks diced
  • 2 carrots peeled and diced
  • 1 red pepper diced
  • 1 green pepper diced
  • 4 cloves garlic minced
  • 1 lb ground chicken
  • 2 cups marinara no sugar added variety (I like Kirkland Organics)
  • 4 cups chicken broth
  • 1 tablespoon italian seasoning
  • 6 oz tomato paste
  • 1/2 cup long grain brown rice rinsed
  • 1/2 teaspon salt
  • 1/2 teaspoon pepper

Instructions

Stovetop Instructions

  • In a large pot heat the avocado oil over medium heat. Add the onion, carrots, and celery and stir for 5-6 minutes (or until onion is translucent).
  • Add the bell peppers and saute for another 4-5 minutes, adding the garlic for the last minute.
  • Next add the ground chicken and cook until no longer pink, 4-5 minutes.
  • Add the marinara, chicken broth, Italian seasoning and bring to a boil over medium-high heat.
  • Add the rice, stir, and cover. Turn the heat down to low and simmer for 45 minutes (or until the rice is no longer crunchy). Enjoy!

Instant Pot/Ninja Foodi/Pressure Cooker Instructions

  • Add avocado oil to the pot and turn on the saute mode and heat up. Add the onion, carrots, and celery and stir for 4-5 minutes (or until the onion is translucent).
  • Add the bell peppers and saute for another 4-5 minutes, adding the garlic for the last minute.
  • Next, add the ground chicken, marinara, chicken broth, Italian seasoning, and rice.
  • Add the lid, seal it, and turn pressure to high. Set the timer for 15 minutes. Let it come down naturally for 10 minutes and then release the pressure manually.
