Chicken Zoodle Soup

This healthy chicken zoodle soup recipe is a gluten-free soup twist on a comfort food classic. It's the perfect way to add in an extra serving of vegetables in a tasty way for beginners.

Ingredients

  • 2 tbsp avocado oil
  • 1 onion diced
  • 2 celery stalks diced
  • 2 large carrots peeled and cut into half moons
  • 2 large garlic cloves minced
  • 8 cups homemade bone broth or chicken broth
  • 1-2 cups cooked chicken
  • 1 tbsp chicken base I use Better Than Boullion
  • 2 bay leaves
  • 1 Rosemary sprig
  • 1 tsp sea salt
  • 1/2 tsp pepper
  • 1 tsp thyme
  • 1 large zucchini spiralized

Instructions

  • In a large stockpot over medium heat, heat up the olive oil. Add the onion, carrot, and celery and saute for 4-5 minutes.
  • Add the garlic and stir until fragrant, about one minute.
  • Add the rest of the ingredients, except for the zucchini, bring to a boil, cover and turn to a simmer. Let it simmer for 30-40 minutes.
  • Add the zucchini noodles and let it cook through for 4-5 minutes.
