These protein rice krispie treats are a huge hit in my house. They’re a tasty dessert style snack with extra protein added to help you and your family up your protein intake in a sneaky (but fun) way.

Protein Rice Krispie Treats

I love a good rice crispy treat. Not only do they bring me back to my childhood, but they’re also just pure comfort. Every time I go to Disneyland, I always get a rice treat (it’s also usually coated in chocolate or peanut butter).

With that being said, I wanted to make protein rice crispies so they would provide me with a little more protein to help me reach my nutrition goals (while still enjoying myself).

I measured everything out in cups, but I also weighed what those measurements were. If yours are bit off, it’s not going to affect the recipe but if you’re wanting an exact calculation I have provided those numbers.

Note: I used whey protein powder as it blends nicely and has a smooth texture. You can use plant based protein, but I don’t know how it will affect the end results as I didn’t recipe test with it.

Can You Make Protein Rice Krispie Treats Gluten Free?

You can make gluten free protein rice krispies, simply use the gluten free alternative for the cereal and look for marshmallows that are gluten free.

Some marshmallows are made with wheat starch instead of gluten free varieties so always read labels. Dandies are a popular vegan variety of marshmallows that are gluten and dairy free.

So feel free to give those a try for these protein rice crispy treats. I used jet puffed marshmallows, although it’s not labeled gluten free the ingredients don’t have gluten in them. However, I’m thinking it could have possible cross-contamination.

How to Make Protein Rice Krispies

Tip when it comes to pressing into the pan: this is a sticky mixture. You can spray the back of your spoon with avocado oil and push it but I found it easier to simply use my hands.

Ingredients

  • 3 tbsps butter 44 grams
  • 6 cups marshmallows 11 ounces
  • 1 cup protein powder 84 grams
  • 6 cups Rice Krispies 211 grams

Instructions

  • In large pot over low heat, melt the butter.

  • Once it's melted, add the mashmallows and stir often until it's smooth and all lumps are gone. Remove from heat
  • Add the protein powder in and stir (working quickly as the marshamllows are getting tougher).

  • Finally, add in the Rice Krispies and mix until combined.
  • Spray a 9×13 pan with cooking oil (I use avocado oil spray) and the back of your spoon. Transfer the mixture to the pan and press into it with the back of the spoon or use your hands if it's sticking too much. Let set for 1-2 hours.

    The first batch I used your measurements and it came out super dry, not enough marshmallow filling. The second batch I used 6/7 tbsp of butter, and a 16oz bag of marshmallows and it was much more of a rice kris pie consistency and not as dry. Just a tip for anyone:)

      1. Your pictures have 15 squares but if the serving size is 1 out of 12 you would need to cut it differently to make 12 in that pan: 3 rows of 4 … right?
